1. In a mixing bowl, whisk together the spelt flour, baking powder, and pink salt.
2. In a separate bowl, mix together the almond milk, maple syrup, vanilla extract, and sea moss gel.
3. Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
4. Heat a non-stick skillet over medium heat and lightly grease with coconut oil or cooking spray.
5. Spoon about 1/4 cup of batter onto the skillet for each pancake.
6. Cook for 2-3 minutes on each side or until golden brown.
